MTF2 is an excellent Feta and Fromage Blanc cultures. These cultures are blended in France to emulate the European style of feta which allows the cheesemaker to select the moistness and texture of the curd. This culture is blended for cow, goat and sheep milk.
Composition: MTF2, drier/crumblier (20 units): Lactococcus lactis subsp. lactis, Lactococcus lactis subsp cremoris, Streptococcus salivarius subsp. thermophilus and Lactobacillus bulgaricus.
Inoculation: 0.5 units per 26 gallons/100 liters of sheep or goat milk. 1 units per 26 gallons / 100 liters of cow milk.
Rotation cultures: Not applicable.
