M235 is an aromatic culture, type LD. The cultures produces flavor and CO2 for creaminess and texture. This culture is primarily used in the manufacture of Fresh Creams, Gouda, Edam, Leerdam, Samsoe, Lactic Cheese, Camembert, Brie and Blue Cheese.
Composition: Lactococcus lactis subsp. cremoris, Lactococcus lactis subsp. lactis, Lactococcus lactis subsp. lactis biovar diacetylactis and Leuconostoc cremoris.
Inoculation: Manufacturing: 3 to 10 units per 26 gallons/100 liters of milk. Fresh cheeses: 2 to 3 units per 26 gallons/100 liters of milk. Soft cheeses: 2 to 6 units per 26 gallons/100 liters of milk.
Rotation cultures: M179, M229 or M231 may be substituted for M235 based upon stock.
