M195 is a an excellent all around non-gas producing mesophilic based culture that fast acidifies. This culture is excellent in Goat milk cheeses, fromage’ blanc, chevre’, semi-hard cheeses, feta and quark that do not require diacetylactis (CO2 producer).
Composition: Lactococcus lactis subsp. lactis and lactococcos lactis subsp cremoris.
Inoculation: Manufacturing: 3 to 10 doses per 26 gallons/100 liters of milk. Soft to hard cheeses: 3 to 5 doses per 26 gallons/100 liters of milk. This pouch can make up to 650 gallons of milk.
Rotation Cultures: M227, M265, M255 and M187 are rotations culture to M195 and may be substituted based upon stock.
