M179 is a fast acidifying, medium gas producing mesophilic culture and is excellent for cheeses to pull forward the fresh flavor of the milk. Very good in fresh creams, fermented fresh creams, soft cheeses, continental and semi-hard cheeses. A very good all around culture whereby the cheese maker is seeking creaminess and buttery flavor.
Composition: Lactococcus lactis subsp. lactis, Lactococcus lactis subsp. lactis biovar diacetylactis and Leuconostoc mesenteroides subsp. cremoris.
Inoculation: Fresh cheeses: 2 to 3 units per 26 gallons/100 liters of milk. Soft cheeses: 2 to 6 units per 26 gallons/100 liters of milk.U/100L of milk. This 50 unit pouch can make up to 650 gallons of milk.
Rotation cultures: M179 may be substituted with M229, M231 or M235 based upon stock.
