M270 is a medium to fast acidifying, medium gas producing mesophilic culture. This culture is used in all cheese technologies including fresh creams, soft cheeses, continental, semi-soft and semi-hard cheeses. A very good all around culture whereby the cheese maker is seeking a traditional cheese.
Composition: Lactococcus lactis subsp.lactis, Lactococcus lactis subsp cremoris and Lactococcus lactis ssp lactis biovar diacetylactis.
Inoculation: Low temperature fermentation: 0.5 to 1 units per 26 gallons /100 liters of milk. Manufacturing: 2 to 5 units per 26 gallons/100 liters of milk. This pouch can make up to 650 gallons of milk.
Rotation cultures: M270 may be substituted with M171 or M189 based upon stock.
