Mesophilic Aromatic Cultures for Flavor

Mesophilic aromatic culture, type LD. The culture produces flavor and CO2.  The culture is primarily used in the manufacture of Continental cheese types (Gouda, Edam, Leerdam, Samsoe) and soft cheese types (Lactic cheeses, Camembert, Blue cheese).

Bioprox Aroma Prom M179, 50 UA (Units). (Rotation cultures M231, M235 or M229 may be sent in lieu of M179 based upon stock): Will inoculate approximately 325 gallons of milk.  Excellent in fresh creams, butter, and soft cheese like Camembert and Brie.  Composition:  See below. (Rotation cultures are M235 or M231 and may be substituted based upon stock).

Bioprox Aroma Prox M235, 50 UA (Units): Will inoculate approximately 650 gallons of milk.  Very good in fresh, soft, blue cheeses and creams.  Composition:  See below. (Rotation cultures are M179 or M231 and may be substituted based upon stock).

Danisco Probat 222, 100 DCU:  Will inoculate approximately 260 to 2600 gallons of milk based upon the type of butter or cheese that is being made.  Used in blue cheese, sour cream, buttermilk, camembert, brie, etc.  Composition: Undefined, mesophilic multi-species of the DL series.
