Bioprox of France:
- M195, 50 Units is an excellent all around non-gas producing mesophilic based culture that fast acidifies. This culture is excellent in goat milk cheeses, fromage blanc, chevre, semi-hard cheeses, feta and quark that do not require diacetylactis (CO2 producer). A 50 units pouch will make up to 650 gallons of milk in a commercial setting. Manufacturing: 3 to 10 doses per 26 gallons/100 liters of milk. Soft to hard cheeses: 3 to 5 doses per 26 gallons/100 liters of milk.
CHR Hansen:
- R704, 50 Units: This Chr. Hansen DVS® culture contains defined mesophilic strains and is for continuous direct vat set use. The culture provides fast lactic acid production and high phage robustness without any CO2 production (homofermentative). A 50 unit pouch can inoculate up to 1,140 gallons of milk or 500 liters of milk in a commercial setting. For making cheddar, feta or cottage cheese.

- Mesophilic MA 11, 14, 16 or 19 (rotation culture), 125 or 250 DCU size:
- Contains: Lactococcus lactis subsp. lactis; Lactococcus lactis subsp. cremoris. Carrier: Maltodextrine and/or Sucrose.

MA 11, 14, 16 and 19 are rotation cultures to each other; therefore, we may substitute a rotation culture when necessary to provide the longest life of the cultures based upon stock levels. If we send a rotation culture, we also send the same size or a size larger.
