Danisco CHOOZIT MY800 is a lower temperature thermophilic blend made of indigenous Savoie strains which were specifically selected for the traditional production of Reblochon cheese. This blend is also fantastic for Chevrotin and many other Alpine or Tomme varieties such as Tomme de Savoie or Saint Nectaire. A unique acidity curve combined with great response at the lower-thermo / upper-meso temperature range (94-108°F /34-42°C) results in great flavor and texture development. Working at the lower end of the thermophilic scale also enables the cheesemaker to combine mesophilic culture blends for a “farmhouse” blend and enjoy the benefits of all at temperatures that will not kill any of the cultures in the blend.
