CHN-11 or CHN-19 rotation: By CHR Hansen to make Continental, semi-hard, Gouda, Edam, Leerdam and Samsoe styles cheeses. Composition: Lactococcus lactis subsp. cremoris, Leuconostoc, Lactococcus lactis subsp. lactis and Lactococcus lactis subsp. lactis biovar diacetylactis. Based upon stock we will either send CHN-11 or CHN-19. CHN-11 available in 50 and 500 Units pouches.
CHN-22: By CHR Hansen this culture can be used in the manufacture of soft cheese with slow acidification (Lactic cheese, Camembert, Blue Cheese), cheese varieties with eyes (Gouda, Edam) and fermented milk products manufactured by separation method (Sour Cream, Fromage, Creme fraiche) and lactis butter. Composition: Lactococcus lactis subsp. cremoris, Leuconostoc, Lactococcus lactis subsp. lactis biovar diacetylactis and Lactococcus lactis subsp. lactis.
Note: CHN-11 produces slightly less gas than CHN-22 or Flora Danica.
Home setting: Use 1/8 tsp. per 1 gallon(3.7liters), 1/4 tsp. per 2-5 gallons(7.5-18.9 liters) 1/2 tsp. per 5-10 gallons(18.9-38 liters).
Commercial setting: 50 Units makes approximately 130 gallons/500 liters. 500 Units makes approximately 1300 gallons/5,000 liters.
